Why food waste matters

The environmental case for rescuing food

When food ends up in landfill, it does not just disappear. Organic matter in anaerobic conditions produces methane as it decomposes. Methane is approximately 25 times more potent than carbon dioxide as a greenhouse gas over a 100-year period.

Beyond emissions, there is the resource cost to consider. Every item of food represents water, land, fertiliser, labour, transport, and energy that went into producing and delivering it. When that food is wasted, all of those inputs are wasted too.

Last Bite targets the food service end of the waste chain, which is one of the most accessible intervention points. The food is already cooked. The business is already open. The only missing piece is a customer to collect it.

How we measure our impact

We track three core metrics for every transaction on the platform.

Kilograms of food rescued

We estimate the weight of food in each bag category and sum this across all completed orders. This is our primary environmental metric.

CO2 equivalent avoided

Using published food waste emission factors, we estimate the greenhouse gas emissions that would have resulted from landfilling the rescued food.

Revenue recovered

We track the total value returned to businesses through surplus sales. This is both an economic metric and an indicator of platform health.

Our commitments

We publish our impact data quarterly

Every quarter we publish updated figures on meals rescued, CO2 equivalent avoided, and revenue recovered by partner businesses. These are available on our Impact page.

We do not claim credit we have not earned

Our emissions estimates are based on conservative assumptions and published methodologies. We note where figures are estimates rather than direct measurements.

We focus on the food service end of the chain

We are a market platform, not a general sustainability consultancy. We are effective at connecting surplus food with buyers. That is the problem we focus on solving.

We work with businesses that maintain food safety standards

All businesses on the platform must hold valid food handling certifications for their jurisdiction. We review this during onboarding and reserve the right to remove businesses that do not maintain standards.
